This evening, after a particularly brutal session of heated power yoga, I was in desperate need of a treat. Forever a sucker for peanut butter and chocolate, I decided to throw together my favorite snack – Healthy Apple Nachos.
Apples are a delicious treat and contain polyphenols that help regulate blood sugar. They are also a good source of fiber and so much better for you than potato chips.
Start with apples and choose from the variety of toppings below and create something preferable to you!
I love to melt my peanut butter and carob, drizzle over the apples, and top with cinnamon, nutmeg, coconut, and walnuts.
Healthy Apple Nachos
- 1 organic apple [variety of your choosing] peeled, cored, and sliced
- Peanut Butter [or nut butter alternative]
- Carob [melt with coconut oil]
- Shredded Coconut
- Chia seeds
- Dried Cranberries
