Coconut Quinoa Porridge

{Gluten Free, Dairy Free, Vegan}

Ingredients

Porridge

  • 1 cup Quinoa
  • 2 cups Coconut Milk
  • 2 tbsp Honey or Agave
  • 1/2 tsp Cinnamon
  • 1/2 tsp Nutmeg

Toppings

  • 1 Banana, Sliced
  • Unsweetened Coconut Flakes
  • Almonds, Walnuts, or Pecans
  • Fresh Berries

Directions

  • Heat quinoa and coconut milk in a small saucepan over medium health. Slowly bring to a bowl, stirring continuously.
  • Add honey, cinnamon, and nutmeg. Reduce the heat to a simmer for 10-15 minutes.
  • Scoop into a bowl and top with any assortment of toppings.
