Cinnamon Mochi Breakfast Bites

Upon waking up this morning, I quickly realized my boyfriend had devoured the last of the eggs. On my second day of Wheat-Free living, breakfast was quickly becoming my biggest challenge.

While I contemplated just grabbing my non-gluten free rolled oats, whipping up some oatmeal, and calling today a bust, my package of Vanilla Pecan Mochi caught my eye. Mochi is a nutritious bake-and-serve rice snack made from sweet brown rice. Mochi is organic and made without additives, preservatives, or colorings. It’s a naturally gluten-free, dairy-free, & sugar-free food.

Originally, I had purchased Mochi to concoct a delicious dessert but why not use it for breakfast? There had to be a way to make this healthy and delicious rice square into breakfast treat.

Enter Cinnamon Mochi Breakfast Bites! They are exactly like french toast, but even more delectable. Perfectly crispy & crunchy on the outside and warm & gooey in the middle, topped with cinnamon, and dipped in agave. Love at first bite. You will be blown away by how simple this recipe is to make and even more astounded by how incredible it tastes.

Mochi runs about $4-5 dollars a package with about 3-4 servings per package. Works for me! This is definitely going to be a regular in my kitchen.

Cinnamon Mochi Breakfast Bites


  • 2 tbsp Coconut Butter
  • 1 square of Mochi (I used Harvest Moon Organic Vanilla Pecan Mochi but any brand of Mochi is just fine.)
  • Cinnamon, To Taste
  • Raw Honey or Agave, For Dipping


  • Melt 2 tbsp of coconut butter in a large skillet over medium heat
  • Remove your mochi from the package and cut into 1 inch cubes. (I used about half of my mochi square for myself and saved the rest in the refrigerator for later.)
  • Carefully place the mochi cubes about 1 inch apart in the skillet. They stick together very easily! Cover with a lid for about 4-6 minutes.
  • Remove lid, flip mochi cubes, and re-cover. The mochi cubes will start to puff up.
  • Once each side is toasted and golden, transfer the mochi bites from pan to plate, sprinkle with cinnamon, and serve with raw honey or agave for dipping!
  • Enjoy immediately.
