Healthy Cinnamon Apple Quinoa Parfait | Nourished Existence

Who says healthy dessert won’t taste amazing?!

This Cinnamon Apple Quinoa Parfait is absolutely decadent!

Loaded with healthy coconut fats, low-glycemic sugars, cinnamon, and protein-packed quinoa, this dessert is definitely a power-packed healthy treat. Layers of creamy vanilla yogurt, cinnamon, apple, and sweet quinoa are bound to please just about anyone.

Cinnamon Apple Quinoa Parfait 

Ingredients

Oat Crumble

  • 1 cup Rolled Oats
  • 2 tablespoons Coconut Oil, Melted
  • 2 tsp Coconut Sugar
  • 1 tsp Cinnamon

Cinnamon Apple Mixture

  • 3-4 Apples (peeled, cored, and coarsely chopped)
  • 1 tsp Cinnamon
  • 1 tsp Vanilla
  • 1 cup Water

Quinoa

  • 1 Cup Organic Tan Quinoa
  • 2 Cups Water
  • 1 tsp Cinnamon
  • 1 tablespoon Raw Agave or Coconut Sugar

 Yogurt

  • 2 cups Vanilla Greek Yogurt

Directions

  • Preheat oven to 350 degrees. Combine all ingredients for Oat Crumble in a small bowl. Spread on a baking sheet and bake until golden brown, about 7-10 minutes. Set aside to cool.
  • In a medium saucepan over medium heat, combine all ingredients for Cinnamon Apple Mixture. Bring to a boil and reduce heat to low. Cook until apples are softened and liquid is syrupy, about 10 minutes.  Add more water if needed in the cooking process. Take off heat and let cool completely.
  • Boil 1 cup quinoa with 2 cups water. Once cooked, add cinnamon and agave. Mix well and set aside to cool

Assembly

  • Spoon 1/4 cup yogurt in bottom of glass, 1/4 cup quinoa, and 1/4 cup cinnamon apple mixture.
  • Repeat the layering and top with oat crumble.
  • Repeat with remaining glasses.
  • Enjoy!
