Busy Girl: Eggs To Go


  • Muffin Tin
  • 12 Eggs
  • Cooking Spray
  • Optional: Whole Wheat English Muffins, Cheese, Bell Peppers, Ham, and/or Sausage.


  • Preheat Oven 350 Degrees
  • Lightly grease muffin tin
  • Crack one egg in each well
  • Stick these in a 350 degree oven for about 15-20 minutes
  • Let cool
  • Assemble into breakfast sandwiches
  • Freeze leftovers for busy girl on-the-go breakfast options

    I just love this idea! Have been making and freezing turkey sausage muffins without the egg…now they’ll have the egg I wanted in them!
