Black Bean Quesadillas | Toned & Fit

Black bean quesadillas are incredibly easy to throw together, taste great, pack in a ton of veggies and nutrients, and you can put practically anything in them!

Black Bean Quesadillas

{Can be GF, Vegan, Vegetarian, Dairy Free}


  • Coconut or Olive Oil
  • 1 Package Whole Wheat or Corn Tortillas {*Use GF corn tortillas for GF option}


  • 1 Can Black Beans, Drained and Rinsed
  • 1 Cup Corn
  • 1/2 Small Onion, Chopped
  • 1 Bell Pepper, Chopped
  • 1 Avocado, Diced
  • 1 Tomato, Diced
  • Shredded Mozzarella {*Use a dairy-free cheese alternative for Vegan/Vegetarian/Dairy Free}
  • Fresh Cilantro, Chopped
  • Taco Seasoning or Cayenne Pepper
  • Cooked & Shredded Chicken, Optional {*Omit for Vegan/Vegetarian or sub in tofu}


  • Guacamole or Diced Avocado
  • Salsa
  • Greek Yogurt (healthier substitute for sour cream) {*Omit for Dairy Free}


  • Heat oil in a large skillet.
  • Crisp and brown 2 tortillas on both sides over medium heat.
  • Place your choice of fillings on one tortilla. Sprinkle with taco seasoning or cayenne pepper.
  • Cover with the other tortilla and cook for 1-2 minutes. Flip.
  • Remove from pan. Top with avocado, salsa, and/or greek yogurt.
  • Enjoy!

    What’s the calories? Fat, protein etc .
