A Healthy Cinco De Mayo - Here's How | Nourished Existence

A Healthy Cinco De Mayo - Guacamole | Nourished Existence


  • 2-3 Garlic Cloves, Peeled
  • 2 Serrano chiles, Stems Removed
  • 3 Ripe Avocados, Halved and Pitted
  • 2-3 Tablespoons Fresh Cilantro
  • 1 Small White Onion, Finely Chopped
  • Flaky Sea Salt
  • 2 Tablespoons Fresh Lime Juice


  • Finely chop the garlic and chiles. Transfer to bowl.
  • Using a spoon, scoop out the avocado into bowl with garlic and chiles. Mash with a fork or potato masher.
  • Stir in cilantro and herbs.
  • Add salt and lime juice to taste.

Baja Fish Tacos

A Healthy Cinco De Mayo - Baja Fish Tacos | Nourished Existence


  • 3/4 pound Mahi Mahi
  • 2 teaspoons Fajita Seasoning
  • 2 cups Green Cabbage, Chopped
  • 1 tablespoon Fresh Lime Juice
  • 1/2 teaspoon Pink Himalayan or Sea Salt
  • 3 tablespoons Fresh Cilantro, Chopped
  • 8 (6-inch) Whole Wheat or Corn Tortillas
  • 2 1/2 tablespoons Greek Yogurt, Plain
  • 1/2 Avocado, Pitted and Diced
  • Fresh Salsa of Your Choice
  • Lime Wedges


  • Preheat outdoor or countertop grill.
  • Sprinkle both sides of fish with fajita seasoning, gently rubbing into fillet.
  • Grill fish 3-4 minutes on each side or until fish flakes easily when tested with a fork. Flake into pieces with a fork; keep warm.
  • In a small bowl, mix together cabbage, lime juice, salt, and cilantro.
  • Warm tortillas in the oven under broil until warm, be careful not to burn.
  • Spread each tortilla with 1 teaspoon of greek yogurt and top with fish, cabbage mixture, and avocado.
  • Serve with salsa and lime wedges on the side.

  • Flaky Sea Salt
  • 1 Grapefruit, Cut Into Wedges
  • 1/3 cup Fresh Grapefruit Juice
  • 1/3 cup Club Soda
  • 1 tablespoon Fresh Lime Juice
  • 1 sprig of Mint
  • Ice


  • Rub the rim of the glass with a wedge of grapefruit. Put some salt on a plate, and dip the rim of the glass in the salt.
  • In the glass, combine grapefruit juice and fresh lime juice.
  • Pour in club soda and add some ice.
  • Garnish with a mint spring and grapefruit wedge or slice of lime.
